Only TRADITIONAL methods for producing our VINSANTO are used. Grape clusters are slow dried for 6 months, are then placed in an oxi-dative ambient of small chestnut and oak wood kegs for 5-6 years.
White grapes like trebbiano, malvasia bianca, colombana but also the malvasia nera are used for this wine.
And this oxidative wine it's not just for Cantuccini!! Also Blue cheese and liver patè pair with this wine as well.
