The grapes are strictly, manually cultivated with heavy growth restriction (1.2 kg/ plant). After it is hand-harvested, the spontaneous process of picking and fermentation occurs reductively without temperature manipulation in a tank. The sulphates are added; for three weeks fermentation on skins and then removed so that the fermentation can continue in stainless steel vessels and the primary aroma is preserved.
