The grape plantation is limited to a growth of 1- 1.2 kg/ plant. At the end of August, the lower half of the clusters are chipped off to increase the concentration of fruit growth. The hand-picked harvest is followed by a reductive fermentation for 25 days along with the rape wine. Malic acid conversion occurs at this stage.
After the process of crushing and destemming, it is stored in our toasted barrique barrels or oak barrels. The maturing time is two year, after which they are blended and put to rest for another 3-4 months before being bottled.
