Vinification: After strong grape selection; cold maceration, long fermentation, racking in barrels after malolactic fermentation
Ageing: 24-36 months in new barrique barrels
Tasting notes:
A special selection of the best grapes in the vineyard and the best grains hand-sorted,
gave this special wine in a limited series of only 2000 bottles.
Dark blackberry in color, leading to a slightly ruby colored rim. Chocolate covered dark
Bing Cherries, dried currants and stewed plums lift the aromatics of the wine while hints
of forest floor, sage and saddled leather float from it tertiary levels.
This wine is full-bodied, complex, bold and exceptionally structured. The earth driven
purities of this wine lead to a rich, chocolate, dried fruit center.
The palate is long and driven structured with firm silky tannins.
Food pairing:
Best combination with dry aged steak and red meat.
